Concentrated Elderberry Juice

Thanks to my godmother (No, not the fairy kind) I started taking 1 Tablespoon of concentrated Elderberry Juice per day in water. It has given me increased energy and has regulated my potty breaks if you know what I mean. It tastes really good too! Just like blueberries. You can find it at any whole foods store in your town for about 11.99 and that will last you about 2 weeks or so.

Did you know that frozen yogurt is about 80 cals and 0 fat for a 1/2 cup!!!!!!!!!!
I got chocolate frozen yogurt with roasted almonds and toasted coconut. It was like eating an Almond Joy candy bar!!!

Okay, So I Failed The Roasted Broccoli Test

So, I saw on Rachel Ray that you could roast broccoli in the oven, so I tried it! She said it would be fabulous and nutty. I was licking my chops, but nope it didn't work. It was crispy on the outside and raw in the middle.

Dinner Tonight

Okay, so tonights dinner was kind of a healthy version of the traditonal spaghetti that I normally cook. Here's what I did:

Trader Joe's tomato medley (Grape tomatoes, yellow tomatoes, cherry tomatoes)
1 Med. Shallot
5 Gloves of Garlic
handful of fresh chopped basil
olive oil
1 cup Trader Joe's pesto chicken (used left overs) diced
1/2 cup diced fresh mushrooms
S&P
Whole Wheat spiral pasta
1 teaspoon EV Olive Oil

Basically, I just threw everything in a pan and let it sautee, then added about 1 cup of pasta and tossed.
It was sooo yummy!!!!
